Yerba mate is primarily consumed in South America. It consists of the leaves of Ilex paraguariensis, which are used after drying to create this stimulating drink (rich in caffeine). Generally consumed in a calabash (mate) and drunk through a filtering straw (bombilla), it is brewed in water at a temperature of 70-80°C. Boiling water makes the drink more bitter.

A tradition from Latin America

Mate comes from South America, and more specifically from Ilex paraguariensis (yerba mate), a plant belonging to the holly family.

It grows naturally in the wild, near rivers or in the heart of the forests of Argentina, Paraguay and Brazil.

At the time, it was cultivated by a local people, the "Guaranis", before being exported throughout the country with the help of the Jesuits.

This is where its nickname "Jesuit tea" comes from!

Today, mate is the pride and joy of Argentina, and has also found its way to Europe.

It is consumed as a drink in its own right, or used in many culinary recipes. A beverage synonymous with conviviality!
